    I like that this expert approaches things with a lot of wisdom, he isn't snobby about tradition nor closed off from trying, and he thinks about the main goal of food - making the customer happy. If 5 out of 10 people like the taste, you are doing just fine.

    Ok, but these are still made by a real Japanese sushi chef. It doesn't even begin to touch on the horrors of gas station sushi.

    The one thing that amazes me about the elderly in Japan is that they still walk unassisted everyday. I hope that I can still be active physically when I reach that age.

    It&apos;s refreshing to see an old chef not getting offended when presented with food that is slightly different to his cooking. Compare this to those youtube channels with French or Italian chefs reacting to people cooking pasta &quot;wrong&quot; or adding a non-traditional ingredient then getting overdramatic and hysterical as if it was the end of the world.

    <a href="https://www.youtube.com/watch?v=_Kg5MsoAp50&amp;t=672">11:12</a> he respects the delicious, nuanced food, but he also wants to keep his restaurant traditional. Much respect, and that is the reason that I would want to eat at his restaurant. I also respect restaurants that take a chance on a newer age approach and try something unique and different. I would visit both, but I would specifically visit the traditional restaurant for the authenticity, and that way I know how to judge the new aged take on it. respect to both styles. I enjoy the yummy food either way.

    The most predictable thing about non-USians trying US versions of foods is the flavor being sweet (or at least sweeter than the original). Our palates are so used to all the added sugar/sweeteners in our foods that it never really occurs to a lot of us how that isn&apos;t the standard for almost anywhere else in the world
