These videos for dummies usually tend to be made by dummies.

He made offside more difficult then needed. Second last defender is confusing. Usually (99,9% of situations) the last defender is the goalkeeper. So if you are between the actual last defender and the goalkeeper when your teammate plays the ball to you, you are offside. They measure the closest part of your body that is allowed to be used to touch the ball to see if you are offside. So technicly it can be your head, knee or foot (sometimes even shoulder).

If there was no offside rule, both teams would just leave all their players at each others goal and have 1 dude pass it up to them. this would make the game totally pointless.

He said it a bit wrong in the video.
Its not when you commit a ''freekick'' inside the 16m area but when you commit a ''foul'' inside the 16m area its a penalty.
And when you commit a foul outside of the 16m area its just a freekick.
Also since covid they changed 3 subs into 5 now and after that if theres a head injury you get another sub extra.
Maybe fun for a video to watch the summary of Nederland-argentinië of the last worldcup, it was a fun game!

The substitution rule has been somewhat changed. You can substitue 5 players per team in total, but only on 3 occasions (the referee stops the play when there's a break in play, like a throw-in or a free-kick). Each substitution also adds extra time (30 sec per sub iirc)

2:41 round part is the planet and the bottom part is athletes (random) holding the planet in each side. I like to think they are angels holding up the planet.

Offside is "the last man rule". In that video for example:
If you are a blue player, you cant get the ball if you are ahead of the last red team guy.
But, you can be waiting on line and when the ball is kicked, you can break the line of the last man and go for it.
Is a rule to keep the game going without exploiting the big fields or fast players..
Is a team-strategy game, and rules go around that idea.

You want to watch "European Football Explained for Americans." He does leave some things out, but overall does a decent job breaking it down.
