My Grandpa was of Scandanavisn decent but he was very thrifty in the kitchen like this. The veggie leavins as he would call them got either put into the compost buckets for the garden in the back yard or made into a stock along with ham bones and beef bones. We would make soups and stews with this. It was deliscious! He used alot of chives and dandilion greens and scallions and radishes that grew wild in our backyard around his garden. He used these as seasonings as well. Alot of the older generations were very thrifty and l carried it with me to my daughter and grandson and granddaughter. We never waste anything in this household! Especially with these high prices these days you cannot afford to waste anything!
