The text at the end of the Psychonauts one makes it pretty clear what that was for. It's an animatic of a scene which was not only cut, but likely was made as a joke for the other creatives on the game's team. The ending text saying it's a "great idea for the game's opening" being an acknowledgement of how this very likely would not be a good idea and shouldn't be seriously considered.

13:20 the reason Devs filled up discs back in the day was so that the eye didn't have to travel far to read the data, so they'd fill the disc up with trash so the "inner ring" is the the game files and the console can read and load in data quicker, speeding up load times and improving asset streaming

For the first thing, I was literally thinking "wow this seems like it's something that would happen in Adventure Time" and then I learned it was made by Pendleton Ward

For Vice City, "moviedemo" likely refers to it being a demo of a "movie file" - the replay itself. This would have been made by a programmer or possibly a designer in order to test/demo the system for making cutscenes.

Fun fact: the possessed skeleton video in goat simulator 3, was also in A Story About My Uncle, which was also developed by coffee stain studios.

The Sonic one is easily explained. Developers will often use random videos in their disc layout to pad them. They are placed at the beginning of the disc so the data that they want/need to be read fast are on the outside of the disc where the laser doesn't have to move as much and the disc can spin faster. They were probably the closest files on hand that were the right size.

LIDAR is a form of topography measurement that stands for "light detection and ranging". It is probably just how the Sky Temple was found. Use those coordinates and see where they go with LIDAR.

I opened the Far Cry 6 Easter egg video in a text editor to examine its metadata, which includes the filenames of various audio/video assets and Adobe Premiere project files.
There are numerous references to "Talisker" – including multiple mentions of "Talisker teaser trailer". Project Talisker was the codename of an in-development Far Cry sequel, subsequently split into the single-player Project Blackbird and multiplayer Project Maverick. Mystery solved, I think.
