Whether or not I enjoy grinding really just comes down to how much I enjoy the combat system. If the combat is fun, then doing a bunch of fights is also fun

Actual evil grinding: gambling lol. Those 0.1% item drops, or better yet all the games, especially gachas using an equipment system with random stats. There's no meaningful way to gauge how long it's gonna take, and yet people love that shit too, as any shiny hunter will tell you.

For me grinding is a relaxing activity that I do on my free time off of work just listening to music. Though I am spoiled by franchises like the modern Persona games or the Trails series where grinding is a non-issue, grinding gives me the opportunity to fully learn a game's combat system.

Grinding isn't so bad if the music and gameplay is really good

I think something that's not talked about often is how grinding can often serve to auto balancimgbmechdnic in a game. Players that get lost or are worse at dodging enemies on the map will naturally have higher levels to help offset lower player skill level. If a player goes out of their way to deliberately grind they tend to get a nice ease up on the game for a while and level scaling can serve to make sure it doesn't just extend forever and ruin the whole game.

I'm suprised that no one brought up Disgaea and the numerous ways it spins grinding into different activities. Disgaea is a min-maxer's dream when it comes to grinding, and yet, it's one of the most fun even on a casual playthrough.

I think where games fail is when they fail to telegraph other options exist. A well designed RPG will make it clear where you are failing. Sometimes this isn't even a matter of game play, it's a matter of presentation.

I remember hearing a friend complain about how much grinding is required to beat the final boss in xenoblade 1. I checked and my party was 10 level lowers than his when i beat the game.

Some people are just bad at rpgs.

One thing that's rarely considered in grinding discourse is just how fun the fundamental gameplay is. I wouldn't complain about grinding in a game like Kingdom Hearts or Tales because I can take this as a chance to try out new combos and skills on weaker foes. In SMTVV if I'm at a lower level there's usually a dozen or so sidequests I can take up to level up, plus selecting a team custom-made for hitting the weaknesses of all potential foes in an area is fun!
