Why Did Fast Food Stop Being Cheap

Over the 10 years to 2025, the federal price index for fast food rose about 54%, while general inflation rose about 36% and groceries only about 29%. But the real puzzle is why fast food was ever that cheap. In 1948 the McDonald brothers' Speedee Service System cut the wait to about 30 seconds and sold a hamburger for 15 cents by stripping skilled labor and variation out of the kitchen. Decades later, around 95% of McDonald's restaurants are run by franchisees with net margins of roughly 5–12%, the American cattle herd has shrunk to about 86 million head — the smallest since 1951 — ground beef has passed $6 a pound for the first time, California has set a $20 minimum wage for fast food chains, and delivery apps take a 15–30% commission. On top of that came a deliberate strategy: McDonald's own figures show a Big Mac going from $4.39 in 2019 to $5.29 in 2024 and the average menu item rising about 40% in five years, while visits from lower-income customers kept falling.
