That was a fabulous presentation! As I've gotten older,I've come to the understanding that these traditions we're taught take more time but are soo needed...quality takes time, more time adds increased value,and in the end...the end product turns into shared cherished memories by all! My mother, Marcella, cooked eggs the same way. Her grease can had a built in screen to filter out the brown bits when grease was added to it. She didn't use cast iron, just an iron skillet. She was from Ohio and lived to be 85.

I’m 73 and learned from my grandmother and mother all about bacon dippings. You are so right about frying an egg.

Grease was all we had when I was a kid,no oils were used for cooking as I remember,certainly in our house. Lard was used and beef dripping from the Sunday joint and mum always kept it in an old basin in the fridge,happy days and I’m 77 now 😅

Love this. Thank you! My dad made the eggs in the morning, and this is exactly how he did them. Even his scrambled egg was done differently to what most people do it today yet they came out creamy soft and soooo tasty.

My grandma's Wagner cast iron skillet is what I use to cook the eggs and I get my lard from a local Amish farm, along with the pastured eggs. I could live on those eggs alone :face-red-heart-shape:

I enjoy your videos. Yes, my mom cooked eggs just like you described. Her name was Regina and she lived to be 83, a WW2 WAC.

I grew up (40's-50's) frying eggs myself, and we had hens back in those days.. everyone liked theirs different, but all were in bacon grease.. my dad wanted them sunny-side up, mom over easy; I liked them medium; all were in bacon grease and I basted them. Though I didn't learn about steaming until I was much older; it made life a good bit easier for me! When I stopped using bacon grease (too much fat dontcha know?) I started using butter, or later olive oil, but never much, certainly not enough to baste. Eventually I settled on a lowish-temp fry with a tiny bit of oil or butter, a little water, and the lid on, until the yolk was steamed over, white completely done. I really don't need a super low-fat diet, and am going to start using bacon more, enough to generate some bacon grease at least! I do miss that wonderful flavor, and the grease is so good in other things as well.
