  Pizza in New York (and yes, I am a native New Yorker) has a MUCH higher content of sodium, oil, and in general has lower quality cheese. In general, it is supposed to be able to hold heavier toppings and withstand being displayed and reheated. &nbsp;Pizza in Italy, on the other hand, uses much higher quality/more local ingredients. &nbsp;(L&apos;industrie is probably not the most typical New York place because it is far above most others in NY).

  Once, when I was a Production Assistant in NYC, an art director gave me a list of the best pizza places in Manhattan, a camera, and $100.00. ‘ I need to create a pizza place.’ The art director said, ‘ go to every place on the list, buy a slice, shoot a360, and the slice,’ then put it all together and bring it back to me.’ I did. Best lunch ever.😊
