  To the many comment makers on here not happy with the fact that the grated potatoes haven’t been squeezed, I can assure you I tried the recipe as shown and it worked perfectly. Each to their own.

  This is probably one of the simplest hash brown recipes I&apos;ve seen. Double cooking the potatoes is a clever move.

  These are fairly &apos;Thick&apos; and that is why the potato needs to be &quot;Pre-Cooked&quot; = which softens and par-cooks the potato. The second &apos;Fry&apos; really just cooks and browns the outside layer of potato. Hope this helps.

  Most recipes would squeeze the potato in a tea towel after soaking to remove excess moisture. But i guess the first frying cooks off the moisture anyway
