  A shortcut for you.....put the washed apples into heavy plastic bags, then into a chest  freezer. Freeze until they're all solid, then thaw and put through the apple press as normal. You'll have broken the cell walls, and will get the most juice out of the apples.....saves all the cutting and masticating time. Secondly, peel several very ripe apples and put the peel into the expressed juice, as the wild yeasts on the skins can create better flavours in your cider. Sloes, damsons and plums are also covered in wild yeasts.

  I have been making cider for forty years now. I used to use my cookers and eaters which were not fit to store, but fifteen years ago I planted three cider apples, Sweet Alford, Black Dabinett and Yarlington Mill. The first gives a touch of sweetness to the finished cider, just a little, while the last two add a touch of tanin, which really improves the flavour. I always just let it ferment with the wild yeasts, which seem to give a better character to the cider. Cheers!

  Great video. A friend invited me over to do this last year. We were four people spending a whole day to make 20 some litres of apple juice and cider. It was a lot of work, but a fun project to do with someone.
