Skillet-Roasted Lemon Chicken Recipe courtesy of Ina Garten Level: Easy Total: 1 hr 25 min (includes resting time) Active: 25 min Yield: 3 servings Ingredients 2 teaspoons fresh thyme leaves 1 teaspoon whole fennel seeds Kosher salt and freshly ground black pepper 1/3 cup good olive oil 1 lemon, halved and sliced 1/4 inch thick 1 yellow onion, halved and sliced 1/4 inch thick 2 large garlic cloves, thinly sliced 1 (4-pound) chicken, backbone removed and butterflied 1/2 cup dry white wine, such as Pinot Grigio Juice of 1 lemon Directions Preheat Oven: Preheat the oven to 450°F. Prepare Herb Oil: In a mini food processor, combine thyme, fennel seeds, 1 tablespoon salt, and 1 teaspoon pepper; process until ground. Stir into olive oil and set aside. Arrange Skillet: Place lemon slices in a 12-inch cast iron skillet. Layer onion and garlic on top. Place chicken, skin side down, over the onions and brush with half the herb oil. Turn chicken skin side up, pat dry, and brush with remaining herb oil. Roast Chicken: Roast for 30 minutes. Pour wine into the pan (not on the chicken) and roast an additional 10–15 minutes, until a thermometer in the thickest part of the breast reads 155–160°F. Rest and Serve: Remove chicken, sprinkle with lemon juice, cover with foil, and let rest 10–15 minutes. Cut into quarters or eighths. Serve hot with pan juices, cooked lemon, and onions.
