Puebla and its moles 🇲🇽 This time we went to explore one of Mexico's most iconic dishes: mole. And what better place to do so than Puebla, a state with countless ways to prepare it, where each recipe preserves the flavors and traditions of its region. We traveled to Cuetzalan, where we visited Victoria Contreras, better known as La Coyota, a wonderful traditional cook who welcomed us into her home, surrounded by nature. We arrived after walking along a small, car-free path. With Doña Vicky, we prepared a delicious chicken mole, exactly the flavor that comes to mind when I think of a classic mole poblano, complete with animal crackers. A delight! We also made chicken in pipián sauce, a warm and comforting pipián that truly warms the soul. I loved it. We also visited Doña Gudelia Victoria Albino, Doña Gude, who opened her kitchen to us and showed us one of the region's great dishes: the famous mole de caderas. This stew, deeply rooted in the Mixteca region of Puebla and Oaxaca, is prepared with goat hips and spine and is traditionally enjoyed during October and November, around the time of the slaughter. In Tehuacán, Puebla, the start of this season is marked by a ceremony and celebrations that are part of a centuries-old tradition. Doña Gude, a true master of this dish, shared her recipe with us, and we also cooked a spectacular pollo encacahuatado, a delicacy you simply must try. And of course, this tour also included salsas, desserts, and many other dishes that helped us understand a little more about the enormous variety of Puebla's cuisine. After cooking and eating with these two remarkable women, it's clear why Puebla is so famous for its moles. More than just a single recipe, we discovered diverse ingredients, techniques, family histories, and ways of understanding cuisine that remain alive thanks to cooks like them.
