I've gotten into cooking roast chicken in the last year and I totally get where he is coming from when he talks about it tasting like chicken. When you eat a really good roast chicken you're like aha yes now I remember. It's like the most quintessential chicken dish and, when done right, is one of the best.

I've had the roast chicken at Barbuto many times. It's one of the only restaurants I'd ever order that in, and it's fantastic.

Jonathan Waxman is an absolute culinary icon. He put so much time and effort into so many chefs, including celebrities chefs like Bobby Flay. His teaching skills were top-notch.<br>He brought California cuisine to New York. He brought farm to table cuisine before it was even a thing. What an incredible culinary talent.
