    As someone who lived in Japan for many years, I can tell you that the train v plane debate is far more complicated than the video explains. &nbsp;First of, you can show up 30 minutes before your flight and easily make it through security and get on the plane so the time Noel spent flying is actually overly conservative. &nbsp;Next (and actually most importantly), it ultimately depends where in Osaka you are going. &nbsp;If you are going to somewhere near Itami (or Amagasaki or Nishinomiya) then the plane is faster. &nbsp;If you are going into downtown Osaka (like Noel) the train can be better (but depends). &nbsp;Certainly if you are going to Kyoto or somewhere in between Kyoto and Osaka, the train is best. &nbsp;Once you are talking about going beyond Osaka (e.g. Tokyo to Fukuoka) then flying is the way to go. &nbsp;Also, if you are headed into the snow-country (e.g. Tokyo-Aomori or Tokyo-Toyama or Tokyo-Kanazawa) during winter then trains get through while planes often do not. &nbsp; Also keep in mind that the last flight out of Itami to Haneda is ~<a href="https://www.youtube.com/watch?v=PcA-Rcka69A&amp;t=1160">19:20</a> while the last train out of Shin-Osaka to Tokyo is close to <a href="https://www.youtube.com/watch?v=PcA-Rcka69A&amp;t=1260">21:00</a> or <a href="https://www.youtube.com/watch?v=PcA-Rcka69A&amp;t=1290">21:30</a>. &nbsp;Countless hours have been debated with beer over the plane vs train in Japan.

    So the things moving on the takoyaki you had are katsuobushi, or bonito (skipjack tuna) flakes.<br>They are shaved razor thin and used to make stocks and as a savory garnishment.<br>They move because they are dried and sensitive to heat and moisture, and takoyaki are like little balls of nuclear fire when freshly prepared.

    Fun fact! Pon Juice is actually a specific type of orange juice made from the citrus called &quot;Ponkan&quot;! We do have regular orange juice called &quot;orange juice&quot; as well :)

    As others have noted, takoyaki is made with octopus. And the reason the bonito flakes on top move around like that isn&apos;t because they&apos;re alive, but because they&apos;re extremely thin and lightweight, so the heat from the freshly fried takoyaki literally blows them around like a flag in the wind. It&apos;s a good thing! Shows you they were freshly prepared and should be piping hot.<br><br>Also, a couple tips for any future Japan content:<br><br>For this challenge, taking taxis was definitely the right move, since time was of the essence. But generally, if you have time to spare, you&apos;re better off taking local trains and/or walking than taking the taxi. It&apos;s so much cheaper, and you get to see more of everyday Japan -- probably discover some great hole-in-the-wall restaurants, see some beautiful scenery, etc. Trains are the most popular means of transportation in Japan for a reason, after all (and that reason is, they&apos;re reliable, clean, cheap, and convenient!).<br><br>If you must take a taxi, too, you&apos;re better off just finding the nearest taxi pool than calling an Uber. Because, as you discovered, if you call an Uber in Japan, you&apos;re literally just calling a taxi -- Uber faced legal hurdles when they first came to Japan, as Japanese law doesn&apos;t allow for private drivers to take passengers as a commercial venture. So Uber integrated itself with the taxi system here instead.<br><br>Anyway! One final piece of advice: should you ever take the bullet train here again (or even regular express trains), I highly recommend buying a &quot;bento&quot; (boxed lunch) from one of the shops on the platform beforehand rather than ordering snacks from on-board the train itself. Ekiben, or &quot;station bento&quot; (station boxed lunches), are practically an artform here, and often contain food of a quality to rival many five-star restaurants. Bullet train ekiben in particular have made some incredible advances in technology over the years, as you can buy self-heating ekiben now -- simply set the bento down on a flat surface and pull the cord sticking out from the side, and a chemical reaction will occur inside the compartment on the underside of the box that&apos;ll heat it so fast you&apos;ll be able to see steam visibly rise from it for about 5 minutes. Once the steam fully dissipates, you can open the box, and you&apos;ll have a perfect, piping hot lunch waiting for you! So much better than ice cream and snacks.
