"Brake in a straight line, let go, then turn in" is advice from the 1960's or early 70's when tyres were made out of dog shit and compressed rock dust ! Even then it was ignored by experienced riders.
They didn't lean or trail brake even half as far and hardly at all in the rain, but they still did it.
EDIT - You also cannot "force the tyre down" by pressure on the footpeg. What are you supposed to be pushing against ? air pressure ? they press the outside peg to "lock in" and not slide off the bike when hanging off.

Great video overall, but there are a few things that I can add a little to:

Like a lot of other comments said, countersteering works on all bikes at all speeds.
The reason for the thumb brake is not because the rear brake lever cannot be pressed mid-corner. That's the shifter, which you can't lift up on because your foot needs to be below it, which is why most racers use GP shift.
The leg dangle marginally lowers the CoG but not as much as lifting your entire torso raises it. It is a small air brake, but the main reason it's done is that it helps get the body position in place and may help the bike turn when the rear wheel floats
I'm pretty sure backing it in is slower, but it's a sign the rider is pushing and basically at the limit. The MotoGP channel uploaded a video 2 days ago talking about how Ai Ogura is special for being one of the few riders who are sliding the rear on corner entry, which is unique and unusual in top-level road racing.
The ride height device helps the wheelie, but not as much as the factory TC that has eliminated the wheelie. Wheelie is also a great use for the hand brake. The ride height device extends the wheelbase so riders can accelerate faster... which is kinda "reducing wheelie," but not exactly the full story.
The V-shaped line/squaring off the corner has more to do with what type of bike is being used. MotoGP bikes have a lot of power, so a V-shaped line is faster because they can be on the gas sooner. Moto3 bikes will always use a "corner speed" line because they need to carry as much momentum as possible.
The short-shifting thing is correct, but current MotoGP bikes have TC which makes the effect less important. British Superbike riders will short shift, though, because they have no TC
The "pushing on the outside peg" thing is basically in line with what you'll see online, but kind of for different reasons. Most people say it shifts the weight/CoG to the outside or down, which any high school physics class will explain is incorrect. It does incentivise keeping your body in the correct place though, and can help with feeling the bike sliding.

Last note is just that I believe a lot of the downforce mid-corner comes from the side fairing being flat to the ground and using the ground effect, not the wings so much, they're more effective on braking and accelerating.

Don't mean for this to be critical, I just like talking about racing technique and what makes the pros so good :)
Let me know if I made any mistakes!

Bicycles can and do use counter-steering as well. I believe the confusing comes from the fact that counter-steering to initiate a turn and counter-steering through the turn (speedway style) use the same word.

8:46 This is actually why drafting matters so much in NASCAR. On Superspeedways, the cars are almost always on the throttle, so gas runs out within something 40 to 45 laps. However, due to restrictor plates limiting horsepower, the field is bunched together and creates lanes that can go almost 7 cars back. Because of the vortex behind, they actually need to use up less fuel to go the same distance and therefore need to pit later than everyone else. It's quite cool how drag and air resistance effects strategy in motorsport.

Target fixation can either be your friend or your enemy, I use target fixation every time I ride, I target fixate where I want to put the bike, there is an old adage, the bike goes where the head is looking

Bikes also use countersteering

It's called counter steering and it does happen on any 2 wheeled vehicle including a push bike, traveling at 15 + miles an hour.

5:12 Not because of a loss of traction, but because the rear wheel suddenly regains traction during the drift.
