  Im a firefighter, I usually do traditional enchiladas however, since we are a busy station, this is way faster to make! THANK YOU

  Rachel, I just saw your cooking videos. My Mother, GOD rest her soul, was the best cook in the world. She was from Mexico and could cook anything and everything from scratch. She raised us "girls" to learn how to cook Mexican dishes. Watching you and your cooking videos brought me unforgettable and cherished memories. We "girls" would sit around the table and watch Mom putting all the ingredients together and watching those ingredients become masterpieces. Thank you!   Today is my husband’s 75th birthday, and he requested “his girl, Rachel’s” enchiladas. We have made many of your recipes, and have loved every one of them. I only began cooking during the pandemic, and still am very much a novice. I really appreciate the care you take to explain each step. You’re an excellent teacher. Also—my husband and I say, “Just like that!” to each other constantly. We think you’re adorable! x

  Update: I made this for dinner tonight and my husband orbited the moon in delight, using the descriptors “rich texture, great flavor, delectable dinner” and “oh, wow!” as he wrapped himself around two hearty servings.   I'm not a cook at all, but i saw this recipe and actually tried it.  It wasn't as hard as i thought to make the sauce and it is YUMMY!  Highly recommend for those struggling to find a good enchilada sauce.  Thanks for the recipe and walk through!

  I used to make something similar for my family when my kids were young.  I put a layer of refried beans in the middle to stretch the meat and served it with salad and Mexican rice.  I’d double the recipe and freeze half in a disposable pan.  It was a great meal for choir night or little league day.
