The Machop line is literally just The Hulk:
A small, flesh-colored humanoid spontaneously turns into a giant, ridiculously powerful green monster.

If you wanna double down on absurd yet "accurate" reasoning, Jigglypuff line gets green eyes because the "green-eyed monster" refers to jealousy and Jiggly is MAD when others sing!

I’ve heard a pretty good “explanation” for the Gen 1 Eeveelution’s shinies. All the Eeveelutions represent a specific color on the spectrum (Vaporeon is blue, it’s shiny is purple; Jolteon is yellow, it’s shiny is green; Flareon is red, it’s shiny is orange). Shiny Eevee is white because white light is every color mixed together.

I just realized Nidoqueen does actually get Nidoking’s colors, they’re just on wrong. It’s green with purple accents, instead of the other way around.

If I could throw a thought out there--

Now that I think about. The story was something about Team Rocket forcing the Magikarp to evolve, if I remember correctly.

Red Gyrados could be a symbol of a regular red Magikarp being forced to evolve prematurely, so it still has its red color.
