I love this woman. She is so right. Reminds me of being in the kitchen with my Mother when I was a little boy 65 years ago. This is what cooking is. We did it on a wood fueled stove and oven. Baked beans were sooo good in that oven.

My husband had a small fried potato every morning for breakfast. His trick was to par cook the potato in the microwave, then cut it up. Came out perfect everytime.

I am from New England and we do it the Scottish way. All vegetables under the earth go in a cold pot of water. All things that grow above the ground go in a boil for a few seconds or steam. Potatoes go in a cold salted water. The cold keeps them from absorbing too much water. Take the potatoes out when it boils, pour off the water leave the steaming potatoes in the pot. Then roll the around hard and fast until the potatoes have crushed a little on the outside. Season as you like. Finish cooking in the oven on a greased flat sheet. They are very crunchy.

In South Carolina they boil potatoes on laundry day. The parboiled potatoes sit in the refrigerator for several days with the skins on. These potatoes are dry and can be easily fried, quickly finished into stew, or diced and boiled for mashing.<br><br>Laundry day was a day of boiling water and the potatoes could also be used for making starch for ironing. Later they were still doing it even when no caldrons needed to be boiling.
