I was born in the older than dirt year. You can substitute the chipped beef with chicken, turkey, leftover pork, browned hamburger. My mom used to mix in peas, tuna, and chopped hard boiled eggs and serve them over waffles when money was tight. You can use rice, mashed potatoes, noodles, biscuits for the base. I save my bread butts and make bread pudding with more custard that bread. It's dirt cheap, very nutritious and it does not last long with one person. My dad liked to slice potatoes and add polish sausage then a few grains of salt.
I used to work in a restaurant as a cook, and I can make omelets, so when the money's tight at the end of the month, I make a ham and cheese omelet or whatever leftover needs to be used up, and then 3 pancakes so I have a restaurant meal at the fraction of the price. If I don't feel like cooking, then it's PBJs with a glass of milk or cottage cheese on the side. It's amazing what I can conjour up or cobble up that makes enough to last me a week.

My dad usually has his bacon oil in a can next to the stove, to fry his eggs and make his refried beans.

1952. We ate a few of those meals even though we weren't poor.

Hi, I loved your video I am 66 years old and I do remember all of those except for the chocolate on the biscuits that's the one thing that we didn't eat. Maybe we couldn't afford the chocolate back then I don't know. It brought home memories of my grandma cooking collards greens with corn dumplings on the top, a pan of biscuits and a pot of beans and most of all my grandfather sitting at the table putting blackstrap molasses on his biscuits. What I wouldn't give for one more dinner with my mom. Kudos to you!
