This is why, after six years of making alcohol myself, I still watch beginner type videos. Even if it's all something I know, hearing it wrapped up differently is sometimes very helpful. Or getting something quotable, like "primary is where the alcohol is made, secondary is where the wine is made."

Okay, I have been a hobbyist in making wine and distilled beverages since 2021. Up to now, I make wine and various drinks at home with different ingredients and measurements each time. Every time I think I have reached the best wine, I end up making another one that tastes even better.<br><br>However, I do this secretly because producing alcoholic beverages is prohibited in my country, Iraq, and it carries a fine ranging from about $8,000 to $20,000. The tools I use are mostly household items, except for a hydrometer, which I managed to obtain and buy during a trip to Iran. Alcohol is also prohibited in Iran, but the restrictions there are much less strict than in Iraq.<br><br>At the moment, the only thing I’m missing is wine yeast. I have not been able to obtain it, but I managed to slightly improve a strain of baker’s yeast so that it can reach around 14% alcohol with fewer off-flavors and fusel notes.<br><br>I really love this hobby.

When you want to make quick wine, you can also store it in the fridge to cold crash it; that makes cloudiness and yeast fall down muuuuuuch faster

That's neat. Primary: Making grape juice into grape juice with alcohol. Secondary: Making Grape juice with alcohol into wine. That's so simple.

Speaking of patience, I made a couple of 5gal batches back in '21. A strawberry mint and a cran-raspberry. When they finished, the strawberry mint was good (the mint washed out) but the cran-raspberry was really harsh. Totally forgot about both until late last year. Now, the strawberry is still good, but the cran-raspberry mellowed out and is amazing. Sometimes, you just gotta let a "failed" batch rest to see how time affects it.
