So no matter what, I must find a way to keep it going." This is the sentiment of Zhang Ruilin, the third-generation owner of a century-old bakery in Tainan. "Without this shop, I might have no reason to stay in Tainan." "Fortunately, his youngest daughter, Zhang Chun'an, shared the same sentiment, and the father and daughter resolved to work hard together.
Speaking of the Zhang family's bakery, it became synonymous with wedding cakes in Tainan in its early years because Hou Yuli, a textile tycoon in Tainan, specifically requested Zhang's wedding cakes when his daughter got married. For this, Zhang Chun'an's great-grandfather even reformulated the braised pork cake recipe, using lean meat and imported Japanese shiitake mushrooms. Later, this braised pork cake not only became a classic, but the bakery also became famous, and ordering their wedding cakes became a symbol of a respectable and prestigious wedding. However, this early glory could not withstand the impact of changing times… With factors such as declining birth rates, decreased marriage intentions, and the aging and conservative second generation, the bakery faces enormous challenges…
"I feel like I should put in some effort for this." "Zhang Chun'an said she grew up in a bakery, helping the adults wrap cakes during busy holidays. She has great confidence and affection for her family's wedding cakes. In those years, she often heard elders talk about the crisis facing the old shop, and even in high school, she silently resolved to learn how to take over. But her 'taking over' wasn't just about using her brain and talking; Zhang Chun'an was determined to learn from scratch. After graduating with a degree in Japanese and completing her internship in Japan, she returned to Taiwan to study baking and worked alongside the master baker in the early mornings, making cakes. Because traditional-style cakes and pastries are the soul of the old shop, and the master baker will eventually retire, the craftsmanship cannot be forgotten." It can be interrupted. Zhang Chun-an's father, Zhang Rui-lin, feels this deeply. A law doctor, he was once a “deserter” from the bakery business. More than twenty years ago, Zhang Rui-lin, who originally ran a law firm in mainland China, was called back to Tainan by his father to take over the business. After struggling for a while, he ended his business and returned to his hometown. He had always wanted to make something of himself, but faced obstacles at every turn. The older generation simply wouldn't accept any changes: they refused to replace the old, collapsing ceiling, and wouldn't allow the wedding cakes to be repackaged in sealed containers, among other things. Chang Jui-lin grew increasingly disillusioned and, after a few years, returned to the workforce, becoming a professional manager with his legal expertise, and later even serving as chairman of a listed company. Even so, he never considered giving up on the bakery…
Fortunately, his youngest daughter shared the same vision and was willing to work together. Over the years, the father and daughter have diligently persuaded their elders and gradually developed a plan for the shop's revitalization. Chang Jui-lin even resigned from his position as chairman after his daughter returned to Taiwan. He devoted himself wholeheartedly to his role as chairman, overseeing store operations and management, while his daughter handled product manufacturing and marketing. Their dedication and perseverance eventually moved the elders, and six months before the old owner's passing, they finally agreed to let them properly renovate the old bakery. However, transformation is not easy. The collaboration between the third and fourth generations and the existing operating model present many challenges. During our interview, we sensed the immense pressure Zhang Chun'an, only 26 years old, was under. But she said she believed in the resilience of life and was determined to overcome and uphold the reputation of this century-old shop.
