    This really resonates with me because when you are poor and lack the money to cook with expensive ingredients—as was the case with my mother—you turn to unconventional options. In Mexico, my home country, people cook with lard, and most things are fried. We eat everything: pig&apos;s head, animal intestines, tongue; nothing goes to waste. However, when you work and have the means to eat more healthily, I prefer to spend money on things that are good for me. I avoid fried foods and prefer to cook meats—like chicken or turkey—without heavy seasoning. As you get older, you can&apos;t really eat those heavily seasoned dishes anymore—even though they are delicious and were part of our past. When you have the financial means, you have to invest in your diet. Food is medicine. It doesn&apos;t matter if certain foods bring back memories of being poor yet happy; our responsibility is to care for our bodies by giving them the best we can. The stomach isn&apos;t a trash can; it’s where we nourish our entire body—our brain and every tiny organ rely on the stomach for nourishment. That’s why it saddens me to think about Aretha Franklin; even with all her money, she consumed those kinds of traditional foods. It’s not easy, especially as we age—and in the Latino community, unlike in mainstream American culture, we often don&apos;t prioritize this. But food is medicine. Spending money on quality food is worth it because your health is the most important thing.❤

    Chittlins mom and grandmom (born 1880) put a cut lemon on top of the pot to cut the smell and it did. I only ate them once in my life as a young adult because I was hungry from smoking weed😮 don’t forget the hot sauce, nobody ate chitlins without hot sauce😊
