I am literally in tears, looking in that pan with those bright blood, red tomatoes! I can smell them through my iPad! I am in a nursing home and the food here is a heaping pile of watered down tasteless, made you want to throw up texture that I can’t even begin to describe affection that we do with the injustice that does us having to look at it let alone eat it! I have touched or smelled anything that resembles a real tomato in so long I’ve almost forgotten what they taste like. The things they give us here are these pink and green hard as a rock balls that taste like you’re chewing the sour part on the watermelon… Just seeing those tomatoes, make me want to call the police on the kitchen here!

Growing up, my family never served eggplant so I never had it in my diet. I’d like to change that. Please do the eggplant video. I would love to be introduced to it with your delicious dishes!

I just learned something. Eva said if you use a garlic mincer, it makes the garlic taste very strong, but if you cut with a knife, the garlic taste is, "better." I never knew that.

When you said, "bon apertito" before tucking into the eggplant, the subtitles read, "imagine a potato" 😂

If I didn't need a reason to like you guys any more, STAR TREK! Lol. Holy great Scotty! My father just passed away in May at only 65. He married my mother Antonella from Vicenza, ( I was born there too) but haven't been back since I was 8 years old. He was an American Army helicopter pilot which that brought him to Italy to meet and fall in love with my beautiful Italian Mother. The original Star Trek was his favorite. It was something we bonded greatly over growing up as I liked it too. ( I like it all though really, first gen, deep space..) Over the last few years he would call me and say "Star Trek is on." And I would say what channel? As he refused to move to streaming. So I still made sure to have a digital antenna to follow along. We would watch Star Trek episodes "together" on the phone almost not saying anything but happy we knew each of us was there. I know you have a lot comments but I hope you see this. Now I can't afford the watch, I am so happy with the correlation, I am crying but not because I am sad but because of this correlation, this crazy thing called human connection. Thank you both.

Zucchini always stresses me out one day you have none, the next day you’ve got 27 sitting on the counter judging you. Thanks Eva for proving that even veggie chaos can taste like Calabria 😅🇮🇹. Anyone else drowning in zucchini this summer!

Please, more eggplant!! It is an underrated vegetable. I sneak it in dishes every once in a while because my husband says he doesn’t like it😏 BUT I ask him how he liked the meal he just ate and, of course, he says it was really good. That’s when I tell him…there was eggplant in there😂🤣😂. So YES, more recipes with eggplant😊
