I like to flash freeze on parchment paper, so I can pinch the ends together, put those ends into the bag, and slide it all off of the paper in one swoop. That helps me get things back into to freezer faster. I do a lot bigger batches than what you demonstrated though. Thank you for the hacks.

When I freeze chopped meat in 1 lb bags, I put a piece of cut-up cereal boxes in between the horizontal bags while freezing so they don’t stick together in the freezer.

Any time I add something to my freezer, after I label and date the item, I write the date and the item on my paper list that is taped to the door of my fridge. At a quick glance, I can see what I have in there and since the list goes in chronological order, I know what needs to be rotated. This has really helped to minimize food waste in my house. There is also a spot on that sheet for leftovers in the fridge - this makes sure they get eaten in a timely manner.

When I make chicken stock, I cook it for an hour and a 1/2 or 2 hours. Take out the carcass and then boil it down. So it's concentrated and does not take as much space in the freezer.

If I may, I would like to share one of my fave freezer tips. I make garlic compound butter and always have it in my fridge. So, I buy the inexpensive French loaves, slice them up and generously butter them. Flash freeze them and then bag them up. So easy to take out however many slices I need, place them in the oven for 5 mins @350 then broil for a minutes or so. No more buying garlic toast or texas toast.. Just make your own and always have it handy!

Thank you for all the handy tips and all that you do! 😊😊😊

When I buy rotisserie chicken, I cut it up and portion it into 1/2 cup portions (the perfect portion for a salad) in sandwich bags and then into a larger freezer bag that’s labeled. The carcass can be used in broth or soup. This makes for a perfect portion and little or no waste.

I couldn't exist without our freezer!!
I recently discovered Costco's frozen hamburger. A bag of 5, one pound rolls. I hate separating 7 pounds of raw meat. These have worked well for us.
Celery... great idea. I use a lot in soups especially when I make my 7 quart batch of clam chowder. Chopping celery the same day as soup making has always been a chore. What an idea. AND... I have tossed out so much wimpy celery. Chop in advance and freeze. Who knew? Not me. Thanks!!!

Great tips! When I’m flash freezing, I line the pan with parchment paper. It stops things from freezing to the pan. Then I can just lift up the ends of the parchment and use it like a funnel to move things into the bag, no scooping needed.

When you flash freeze, put it on a silicone mat on cookie sheet and when you take out of freezer they pop right off. Don't stick like it did on a plain cookie sheet.

Mary Katherine here is another thing I do. I buy the big bag of peeled garlic from Costco and use my food processor to mince it. Scoop it out with my cookie scoop and flash freeze and bag them up. While I am at it I make garlic butter the same way. Such a time saver.
