Hey guys, just wanted to clarify and answer a commonly asked (and important) question: IS IT SAFE TO COOL RICE AND THEN REHEAT IT?<br>The concern there is a bacteria called B. cereus, which can produce spores/toxins. <br>The overall risk of B cereus toxin infection is extremely low from refrigerated, properly handled rice, and only arise from improper cooling or prolonged room temperature storage after cooking, or inadequate reheating. The main risk arises if rice is left at room temperature for extended periods after cooking, allowing B. cereus spores to germinate and multiply, potentially producing toxins that are not always destroyed by reheating.<br>So here are some general safety guidelines to minimize the risk of infection: rapid cooling and proper refrigeration is critical<br>- rice needs to be cooled PROMPTLY after cooking, and stored at ≤4 C / ≤ 39 F; and then reheated thoroughly<br>- studies show that B cereus growth is unlikely if rice is stored below 10C / 50 F; and in the studies I quoted in the video, it was cooled to 39 degrees F for at least 24 hrs

I’m diabetic and I’ve noticed when I eat enough protein, fat and fiber before my carb - baked potato - my blood sugar did not spike. Also, daily walking of about 1.5 miles really keeps my CGM reading low for a whole day. Of course, this is just my anecdotal data point. I also try not to eat after 6 PM and fast for at least 12 hours. A good night’s sleep also keep my morning fasting glucose below 100 mg/DL. Just like to share with y’all.

Dentist here. For me, the best channel on YT. Leonid does not keep us on screen for ridiculously lengthy periods of time. <br><br>He shares the most important info derived from his readings and research in a nutshell and speaks to the general audience in a manner that makes anyone understand that which he explains. <br><br>I recommend his channel to ALL my patients via broadcast, as it saves me from always having to explain to my patients the importance of a healthy diet. <br><br>Alongside Drs. My mom controls her glucose levels with peanuts. She would get spikes in the evening, so she started to eat peanuts, and that cut down on the amount of fast acting insulin she needed to use.

Interesting. I found that eating salads first (preferably uncooked) and then carbohydrates, seems to prevent glucose spikes, certainly weight gain.

I was diagnosed with Type 2 diabetes in December 2023 at 74 years of age. After much research, I started freezing bread, pasta, rice, chapattis, pitta in individual portions. <br><br>Other cooked foods are kept in the fridge. I don’t eat anything freshly made. I am in remission since June 2024. So this method works.
