I believe the intention of Michelin-star and general high-end restaurants being so notorious for high prices and low portions is because they're moreso selling you an experience; like you go there one time because you're eating what is essentially the food equivalent of memories. Like the guy in the video mentioned that eating those dumplings brought him back to a point in his childhood. Going to these restaurants typically invokes emotions like those because the food is so well made that you only really need one or two bites to really get that vision or experience and it's something you intend to remember. If I have the best burger of my life, I'd much rather get just one bite than like 10 because if I get 10 I'm getting that same experience again and again and again and I'm being flooded with dopamine and then afterwards I'm physically craving that thing again. Just one bite though, and although I wish I had more I'm lowk just remembering the taste as a memory rather than an active sensation and because of that it lasts longer. Like at the second restaurant the dude said he was getting a 10 course meal. If I went to like chilis or olive garden and got 10 courses i would genuinely be throwing up by like #3 (i have a smaller stomach since i didn't really eat a lot as a kid) or #4 simply due to the fact that the portions are so big. because of that, when you go to these restaurants you really only think about what you ate versus the restaurant as a whole. now if you get 10 courses which is practically everything on the menu, you're experiencing so many tastes in small yet experienceable portions and your senses are so encompassed by the presentation and the environment and the variety of flavors that you come out remembering the experience you had eating there rather than just the flavors themselves. that persists as a memory, hence why these places are almost always monikered "a perfect ONE AND DONE experience". going there again would destroy the carefully built idea of a perfectly curated culinary experience, so the prices are hiked both due to the obvious factors (labor costs with the dish specifity, ingredient costs, taking taxes into account, etc.) and because they're actively discouraging you from coming back, because if you do, it goes against the entire idea of the restaurant. you never go there for food or to simply eat with guests or have a conversation alongside eating, you go there FOR the experience and the experience always comes first<br><br>ultimately i dont work in the food industry so feel free to correct me if i'm spouting bullshit but thats just what I believe

I think it’s smart af and that a lot of restaurants should have it. Instead of them having to guess when you need them or watching from across the restaurant to see if your glass is empty.
