An object impacting a moon and shattering it would also create a huge cloud of dust, and if the object had a high velocity (like a comet) some of that dust cloud woud probably have a high velocity itself, which would make the cloud quite complicated in shape and orbit. An irregular dust cloud around a planet might very well cause irregular seasons as it blocked out the sun. Also, astronomers (like the maesters) would to some extent be able to predict the winters by making observations and calculations.

When you talk about eye color changing between blue and gray, it reminds me of Athena. Depending on the source and translation, you could see her described as gray-eyed,, blue-eyed, bright-eyed, silver-eyed, or owl-eyed. I think there was a pun in ancient Greek between the word for owl and for bright (which would eventually be used for blue). It might be worthwhile to check for Athena symbolism. Also, when you mention that you think the others can't die, that goes well with my (not original) thought that they have to be welcomed into the realm.There's that quote about it's just Scotts beyond the wall, and that John welcomed the Wildlings into the realm.

I thought it was interesting that the canceled Game Of Thrones prequel series that HBO made a pilot of (I think it was in 2021, before House of Dragon) was called “Bloodmoon” and was supposedly set several thousand years before the events of Game of Thrones. That sounded a lot like it may have had to do with the Dawn Age and these moon theories behind ASOIAF. I was bummed they killed it.
