I miss Dexter so much. I wished he had been a character on Clone Wars. Running a spy network in the Outer Rim or acting as a guide for Obi Wan on an uncharted hyperspace way. We didn't get enough civilian POVs and Dexter given his general wisdom may have been a very interesting voice on the issue of dehumanising Separatists. Considering his Outer Rim connection he could have been an interesting foil for Anakin and Ashoka arguing for nuance.
Or he could just act as an information source. The guy has encyclopedic knowledge of obscure people and species that the Core Worlds ignored until war was declared.

I will never tire of how you use Star Wars to talk about real life stuff. Makes it way more real feeling to me.

I feel that Dex’s Diner would’ve made an excellent network for Luthen’s movement

I love history, but still appreciate how Alan tricks us into learning history by presenting it behind a façade of Star Wars

It was suggested that Obi-Wan hung out in that diner a lot. One of the items inclued with the book "The Jedi Path" is a napkin from Dex's Diner with Obi-Wan's sketches for his lightsaber design. I think part of the idea was that Obi-Wan recognized that Dex held wisdom that deserved to be known. I just really liked the idea that Dex did a lot of different things and the diner is more like his retirement. He made his fotune among the stars and gained a great deal of knowledge of people and places the Republic and the Jedi overlook. And Obi-Wan saw that Dex was as wise as any master, just in a different way. The wisdom of a lifetime of working and exploring. A wisdom of secrets and hidden places.

No mention of Dex's Donut stand? When he moved to Coruscant, he just had a little sidewalk donut stand that served donuts and caf (coffee). It was destroyed when a taxi crashed into it. The settlement money from the taxi company was used to open the diner.

As for Dex's location, it's very possible that the redevelopment there gets more value out of not-making-more-urban canyons overall, and/or that that's actually the top of some very old building that can't support any more weight, or those low buildings are actually placed over some void under the surface-streets and plaza there so they decided to keep some local color type atmosphere with a few 'low' buildings. Also it could well be under the airspeeder lanes . The sunlight in what might otherwise be urban canyons is inherently valuable.

In legends Dex did some cool stuff, he joined a group called "Erased" because he had to run from the empire, and as the name suggests the group erased all memory of their existence to get disappear from the empires radar.

The vibe in whatever room you're filming in is fantastic.

I love a foggy or rainy evening and chilling in a room with a view. Something about it.

Dexter represents the good side of the “old boy’s network”. He’s probably friends with half of the Jedi, because of his experience.

I used to run my business out of a coffee shop more than my office, because the guy who owned the coffee shop is an old friend and a small-business tycoon by his own rights. We used to discuss deal worth hundreds of thousands of dollars right in front of him because he was part of my “old boy’s network”. I cut him in on a couple deals because his mom was an old friend and so was he. Everything was legal and above board, but it looked exactly like the backroom deals of organized crime.

Dex was one of the characters you aren’t supposed to notice, but you are supposed to notice. He’s like the consiglieri of the mafia. He is above the fights between underworld families, but still a major part of them. He probably doesn’t even own his own diner, other than on paper.

I played a character like him once in a Star Wars TTRPG. It was after Scum & Villainy was released for the Saga Edition. I was playing an Ubese mechanic who just happened to own a really big ship that was converted to be a sort of underworld hub. Smugglers would come in to dock, dump their cargo and somebody else would come pick it up, no questions asked. I rented out bays to all of the syndicates and I didn’t want to know what they were storing. On paper, none of what was in there was mine. I never made planet fall, so I never had to deal with customs. If I ever got boarded, I was a diplomatic ship from a non-republic planet in the mid rim.

Deter represents that sort of thing. He is an information broker primarily, when he isn’t cooking your lunch. Enjoy the meal and leave a fat tip, for the “ambiance”. You savvy?

I used to think this scene was a throwaway gag to have a classic diner and a wacky character.
But thank you for altering my perspective and diving into the details to illuminate what this reality actually means about the location and character.
Keep opening our eyes to the beauty of the galaxy my friend.

Maybe the diner is actually a roof-top unit for a larger structure beneath it...a way for an otherwise utilitarian space to make a little cash between developments. Its small, possibly portable - perhaps something like a food/truck/mobile home, parking for a few months or even years at a time the moving a block or 2 to make way for newer, more expensive vertical construction...
Zoning could totally be a factor too - built on a traffic easement that limits vertical growth, or unincorporated sliver of land shaved off of a larger development, or even because of an inconvenient "underground" feature or infrastructure (tunnels/pipes etc.)....
Maybe Ive spent too much time thinking about this...
