    We grew up with amaranth <br>Our grandparents would pick it growing wild from the mountains <br>Prepared simply by boiling and add lemon and olive oil<br>The liquid left over is also consumed

    The guar or cluster bean, with the botanical name Cyamopsis tetragonoloba is another good option for hot climates. <br><br>Leaf is edible, legume pods is mainly consumed. Guar gum is extracted from the seed endosperm, has plenty of industrial and food additive use.

    I know amaranth is KNOWN to the public - it is sold as a flower called LOVE LIES BLEEDING which is a specific form of &quot;weeping&quot; amaranth with blood-red flowers/seeds. &nbsp;It is not just an ornamental variety - it can be used in just the same way any amaranth variety can be used.
