We want a moist cake, but not a soggy one! A spoonful too much liquid can ruin the entire batter. To prevent the delicate strawberry pieces from sinking to the bottom, toss them in a teaspoon of flour before adding them. That’s an old trick of mine that always works! And remember, my child, only use the yellow part of the lemon! The white underneath is bitter and doesn’t belong in our lovely cake. ------------------------------------------------------------------------------------------------ Step by step 1) In a bowl, combine 3 eggs, a pinch of salt, 1 tsp vanilla sugar, and 150 g sugar. Whisk everything together for 2–3 minutes until creamy. 2) Add 120 ml sunflower oil, 250 g ricotta, and the zest of one lemon. Mix everything well. 3) Sift in half of the flour (140 g) and fold it in. Then add the remaining flour along with 10 g baking powder and carefully stir the batter until smooth. 4) Gently fold in 400 g of finely chopped fresh strawberries. 5) Pour the batter into the prepared baking tin (Ø 22 cm) and smooth the top. 6) Decorate the surface of the cake with halved strawberries and sprinkle almond flakes over the top. 7) Bake the cake in the preheated oven at 175°C (without fan) for 65–70 minutes. Perform the skewer test: if no batter sticks to the skewer, the cake is done. 8) Allow the finished cake to cool completely in the tin after baking. Before serving, dust generously with icing sugar.
