Mark, <br>The little paddle you scraped the wasabi on, actually is the skin from the belly of a Sting Ray fish. It’s the same material that was used in many antiques to cover like leather, and the name of it was Shugren. Really loving this episode! Thank you so much for your wonderful channel.

We ate hida beef from a humble farmer-owned restaurant in Takayama where you walk in and choose your meat from the fridge then grill it yourself over charcoal. Best ever!

What a great video. I was in the beautiful Takayama for the Sakura season earlier this year. Stunning place, I still dream about the Beef Sushi, outstanding!!

飛騨牛を紹介してくれてありがとうございます！<br>Thank you for introducing Hida beef! Even though I live in Gifu Prefecture, I haven't tried all ten ways to eat it. For Hida beef yakiniku, I highly recommend eating it with salt!
