  Baking soda is straight Sodium Bicarbonate, it&apos;s a base that works better for cleaning like liquid soap.<br>Baking Powder is a combination of Baking Soda and Cream of Tartar. Cream of Tartar being a byproduct of wine making and is acidic.<br>When you combine a base and an acid you get a reaction; see baking soda + vinegar.<br>That&apos;s why Baking Powder is used to make baked goods, pancakes and waffles soft, it adds air pockets from a controlled reaction of base + acid + water.
