As an old, grey dragon once said:
"What is better; to be born good, or to overcome an evil nature through great effort?"
Or something like that...

This is something I noticed upon subsequent playthroughs. Trying to roleplay as a completely diplomatic silver-tongue or a restoration magic priest has very limited surface level roleplaying value. I remember on one of my first playthroughs in whiterun, going into the Temple of Kynareth. I saw the weak and sick there and thought to bring out my heal other spell; and yet nothing. Not even a questline for it. If they were on their death bed even a small fetch quest to ease their end would have been nice. But the suffering remained.

Another thing to consider about the "Destroy the Dark Brotherhood" quest: The Night Mother wanted them to be destroyed. If you do the DB questline, the exact same thing happens, but from a different perspective. The Dark Brotherhood has been corrupted, and it must be destroyed so that it can be reborn. By destroying them yourself, you're actually doing the Night Mother's will.

Point of order: Meridia is not as nice as many think. Her servants, the Aurorans, basically have no free will. They obey her utterly, and literally cannot choose otherwise. Moreover, once you touch the beacon, she starts ordering you around, demanding you obey her - thus, her attitude is not "benevolent goddess of light" but rather "anti-undead goddess of domination."

I like the idea that the dragonborn is muckin' about Skyrim and running up daedric debt because they can't touch the DB in the end without answering to Akatosh

Even the Companions "accidentally" set you loose into Whiterun for a quick rampage as a new werewolf. (In-universe? Genuinely an accident. Out-of-universe? The devs basically saying "go have fun slaughtering guards, kid".)

“Crom! I’ve never prayed to you, I have no tongue for it. No one, not even you know if we were good or bad. Why we fought or why we died. What matters is that a few stood against many, that’s what matters. Valor pleases you Crom so grant me my request. Grant me revenge! And if you do not listen, then to Hell with you!”- Conan

one reason i hate going to falkreath is that nobody will shut up about the dog they saw - and the blacksmith won't even have an option to trade until you go and find the daedric mutt, making efficient smithing in that town all but impossible until you at least lie and say you'll do it.

I don't think it's just 'laziness' though. Rather it's the attitude of 'Accessibility'. The bethesda design philosophy is that very little should be designed to be missable content for the player. It's the Dawnguard situation scaled down: most daedric quests lure the player in with noble or practical intentions so that the non-evil roleplayers can still get the reward at the end without feeling (entirely) morally compromised. The Vigilant in Molag Bal's house must be killed to escape, Sheogorath traps you until you play his game, Sanguine disguises himself as a simple drunkard with a wager, you have to deal with Sinding one way or another or else he might slaughter other innocents in the future. It's all designed to allow a righteous player an excuse to get involved if the prospect of demonology doesn't appeal, and watering down these conflicts comes with a healthy helping of moral relativism as a result.

My moment of a truly good deed, was when after completing the dawn guard questline, I was told that a “Friend” was kidnapped. Said her name was Lucia and I thought,” Who is Lucia?” So I make my way to save the hostage Dragonborning my way down the lower crypts and… It was the child. The poor little girl at Whiterun with only rags to her name and nervously avoided on the streets. She looks up and says,” It’s you, it’s really you! I honestly didn’t know if anybody would come for me. Thank you🥹.” The thought that the vampires kidnapped her not only because she was a defenseless child, also because she was homeless girl whose disappearance wouldn’t turn any heads, sent a shiver down my spine. Adopted her then and there, a warm home and bed forever and always awaits her now; no more and no less. ❤
