This is one of the best and most accurate video about ribs that I have ever seen. I have been using most of his methods and information for many years and have great success. I have a few error but it was always the meat quality or deviation for the known working methods.

i bought a three pack of baby backs at our costco in venice fl for thirty bucks i think. i froze two and dry rubbed, double wrapped in foil and baked at three hundred degrees for three hours in the kitchen oven. i attempted to remove the membrane but someone had already done that! thank you costco, they were fantastic! i put on some makers mark spiked sauce , pulled the bones out and wifey and i shared the rack and still had some leftovers.

I have to admit that I have only been getting the spare ribs strictly for the cheaper price. And they always seem to turn out great on the smoker with some mesquite wood. I know they say use fruit woods, but I just love the way the mesquite tastes. I do like applewoods for chicken smoking. I use a weber kettle with a dual zone Slow n Sere. If we have guests, meaning more meat needed, I break out the Smoky Mountain... both work great.

For quick ribs I pressure cook ribs for about 20 minutes and finish on the smoker for perfectly cooked, melt in your mouth, ribs. I use hard apple cider in the pressure cooker and finish over large lump charcoal at about 225 deg F with or in combination with apple, pear, cherry or pecan wood. <br><br>Any more than 25 minutes in the pressure cooker and the ribs will fall apart.
