Once they splutter, add finely chopped onions and crushed garlic, and sauté until the raw smell goes away. Next, add finely chopped tomatoes and required salt, sautéing until the tomatoes turn soft and mushy. Step 2: Add the chopped brinjals (soaked in water) to the pan and mix well. Add turmeric powder and sambar powder, stirring well so the spices coat the brinjal evenly. Step 3: Pour 1 large tumbler of water, cover with a lid, and let it boil on medium flame until the vegetables cook and the gravy thickens. Once the curry thickens, add the smoothly ground peanut paste and mix well. This gives extra flavor and a thick texture to the gravy. Step 4: Finally, garnish with curry leaves and turn off the stove. Hot and delicious Brinjal Curry is ready! It goes well with rice, idli, dosa, and chapati. If you like this recipe, share it with your friends!
