Another trick you should try, pour soy sauce into a small container with a lid, and add minced garlic to it and store it in the fridge(You can also do it with dried kombu) the garlic slowly ferments and gives the soy sauce more depth the longer you keep it in the fridge, and the cold temperature and high sodium content from the soy sauce prevents bad bacteria from growing.
