持ち込まれた安い食材を普段使ってる食材と比較するんではなく、単体で評価してるのが気持ちいい。<br>貶そうと思えばいくらでも言う事は有るだろうに、食材の良い所を活かせる調理法を提案してるのも食材へのリスペクトがあってお若いのに尊敬できる職人さんですね。

安いウニの辛みはミョウバン以外にもブランチング処理の際に添加される結着材や、最初の洗浄時に使われる洗浄剤（次亜塩素酸ナトリウム等）が残留してる場合も感じるらしいですね…

だいぶ昔だけど、岩手の山田町で防波堤から投げ釣りしてて、現地の人に南部せんべいあげたら、生きてるウニその場でそのまま食べさせてくれた。あのウニの味は一生わすれない。やっぱり現地の海鮮はダントツでうまい。
