This really changed how I see flour. Stone milling wasn’t nostalgia — it was a system designed to protect nutrition, not shelf life

A month ago I started buying Italian flour from a stone mill (Manitoba from Antico Molino Rosso) and baking bread with it.
The taste and smell are fantastic 😋 and i stopped having stomach problems (bloating, heaviness)
I fully recommend 👍

I have a grain mill and make almost all of our grain products. It is the most delicious, satisfying bread I have ever eaten. The tortillas are out of this world. It’s very healing food.

When I first went to the Indian desert every housewife was grinding wheat between stones. In that place a meal, for men, women and children was heavy flat bread the size of a dinner plate with a little gravy or sometimes just a smear of butter. Men would eat 4 pieces, I could only manage one. Everyone very healthy and well.

I purchase my flour from a water driven stone grist mill located in my region. It has been in existence since 1832. The mill has burned down and been rebuilt four times, by the same family who started it in 1832. Its quality is unsurpassed by any other flour I have ever purchased. I now buy it in 25 pound quantities for my own personal use.

I have a stone mill not far from my home. It is a historical site now owned by the county and is open at various times throughout the year for festivals and tours. The last time I was there, I asked one of the members of the historical association what they did when the stones wore down. He said there is a place in France where replacement stones can be purchased. They were looking for someone in the US who could do the work but had not found anyone so now they only grind during the festivals to save wear and tear on the stones
