  My father wanted nothing more than to drive a truck. We were so broke for so long that anything other than beans or pancakes was Thanksgiving Dinner. Once he got on with a Union company and got real living wages, we vowed to never again eat another brown bean. After about four years we were sitting around trying to figure out what kind of Thanksgiving we wanted because we had already been chickened out, turkeyed out, and hammed out with friends and family starting the holidays early. My father said, "I know we swore we'd never eat them again, but a big ol' pile of beans and cornbread sounds so good." So yes, our Thanksgiving Dinner that year and afterwards was beans, cornbread, fried okra, fried potatoes, fresh onion and peppers for the toppings, and reminding ourselves how thankful we were to NOT have to choose between beans and the light bill, between the water bill and rent, between a winter coat and winter tires. Thanksgiving for us wasn't about turkey and dressing and pie, it was being thankful we finally had plenty for ourselves and to share with Toys for Tots and the food baskets in the front of the stores. A restaurant I worked in decades later had a summer plate with a grilled chicken or chicken salad, and coleslaw. That pumpkin custard didn't have the bread crumbs, but it was cool, dense, and a nice colorful finish on the palate and plate. This is close enough it's going into the collection.

  My grandson(15yo) loves pumpkin, this sounds perfect. He is going into his 4th round of chemo and often wants soft things to eat. Thanks for sharing- God's timing

  This pumpkin bread pudding is so delicious that my husband gave it 5 stars! I used ginger snaps instead of breadcrumbs bc that's what I had on hand and it gave it a wonderful flavor! Will be making this over and over!

  One year when my sister and I were youngsters,  we were very poor.  Our parents were coming home late from work , and we knew there wouldn't be a turkey,  so we decided to surprise them with Thanksgiving dinner.  Our pantry was pretty bare so there wasn't much food available,  but there were packages of ramen soup and a can of spam.  We roasted the spam and made soup for dinner. We were very thankful to have food on the table that day and still reminsce every Thanksgiving.

  I'm 54. I have 2 brothers. My mother chose me how to learnhow to make our family bread recipe that has been around for 6 generations. Everyone's favorite item every holiday. My mother passed away passed away 8 months ago. I haven't made it since her passing. This Thanksgiving will be the first time I will be making it again. 🙂

  Our favorite must have is cranberry/blueberry sauce. When my kids were little, they did not like traditional cranberry sauce. It was too tart for them. So I came up with a way to make it more palatable for them. Instead, I use half cranberry, half blueberries. It was a hit! Now it&apos;s become our tradition.
