The can of Cento tomatoes shown is not DOP. Cento is self-certified, and as a result of this they were sued. If you look, there is no DOP seal. This doesn't make the tomatoes bad but don't pay the DOP price if they aren't.

CENTO is the best I've used for my tomato sauce. Very consistent.

I appreciate that you explained the calcium chloride purpose. I make some dishes where I would like the tomatoes to get smooth, but others (like chili), where I want some chunks of tomato flavor. Thank you!

When I'm in a grocery store, I check to see if Cento or Muir Glen tomatoes are on sale. At $4-$5 a can regular price, it's better economically to stock up when they are BOGO. The tomatoes last a LONG time in the pantry so they're ideal for bargain shopping and storing.
