My grandfather ran a hunting camp kitchen outside Missoula for almost thirty years, feeding loggers and hunters off a wood stove with nothing but what hung in the smokehouse. He never wrote a recipe down — just said "you'll know when it's right." I'm Hank. I ran that camp after him, then spent years clearing out old farmhouses and estates across Montana and the Dakotas — enough to see plenty of grandmother's cast iron tricks vanish because nobody wrote them down. This channel is me passing them on. Not recipes — the tricks. Why you salt a steak an hour early. Why old timers rendered their own fat. What a camp cook does with one deer and twelve hungry men at sundown. Some of it, science explains now. Some was just necessity. Where the old way was right, I'll say why.
