I spent 35 years studying the food on your supermarket shelves. Now I'm out of the system — and I read the labels for you. I'm David Hartley. For three and a half decades I was a development chef for food and senior product developer for the companies whose names are never on the pack — the factories behind the biggest food brands and the supermarkets' own labels. I wrote the recipes. I signed the specification sheets. And I sat in the meetings where those recipes were cheapened, one ingredient at a time. I exited and now I say the quiet part out loud.
